  8. Heat smoker to 250°F using red oak or hickory for fuel. (place wood chips in chip tray for gas or electric smokers)
  9. Smoke ribeye 10 hours, or apx 1 hour per pound for different sizes.
  10. Inject remaining mixture every 2 hours.
  11. Take up ribeye, remove all toothpicks and slice into 12 ounce steaks. Do not let meat stand after slicing. Slice as meat is served.
