  3. Remove the roast from the oven and transfer it to a cutting board. Cover it tightly with aluminum foil and allow the meat to rest for 20 minutes. Carve and serve with the sauce.
  4. Don't allow the meat to sit covered with aluminum foil for more than 30 minutes or it will overcook!

  6. Place the Stilton cheese in the bowl of a food processor fitted with a steal blade and blend until finely minced. Add the cream cheese, mayonnaise,sour cream,scallions, 1 teaspoon salt,1/2 teaspoon pepper, and Worcestershire sauce. Process until smooth.
